Homemade Microwave Peanut Brittle


This brittle is sooo good! My husband is raving about it (which always makes the cook happy!)
 Because it only requires the use of the microwave, you can whip up a batch really quickly and easily.
Ingredients:
2 cups sugar
1 cup light corn syrup
2-4 cups salted peanuts
2 teaspoons butter
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 teaspoons vanilla extract

Directions:

1. In a large microwave safe bowl, combine the sugar and corn syrup. Heat uncovered on hight for 3 minutes. stir. Heat for 2 minutes longer. Stir in the peanutes, butter, and cinnamon

2. Microwave uncovered on high for 20-30 seconds or until mixture turns a light amber color. Quickly stir in baking soda and vanilla until light and foamy. (it will be very thick)

3. Immediately pour onto a greased cookie shet and spread with metal spatula (I used a wooden one and it was fine). Refrigerate for 20 minutes or until firm. Break into small pieces. Store in an airtight container.
